This is really heavily seasoned chicken cooked until crispy and packing a bit of heat. You will looooove it any time you're craving Indian or Cajun food, and it’s fantastic over rice (cauliflower or otherwise) or alongside some steamed veggies!
Here's What You Need...
2 pounds chicken breasts, chopped
1/4 cup avocado oil
2 teaspoons ground ginger
3/4 teaspoon ground turmeric
1/4 teaspoon garlic powder
1/4 teaspoon ground cinnamon
Combine all ingredients in a dish and marinate overnight in the fridge.
Preheat the oven to 400F. Place the chicken on an oiled baking sheet.
Roast about 15-20 minutes or until cooked through, turning once halfway through cooking.
Heat a skillet over medium heat and add your choice of cooking fat. Cook the chicken until crispy on all sides.
